Chubby Hubby Cupcakes!

If you LOVE ice cream as much as I do then you have had your fair share of Ben and Jerry's. My favorite Ben and Jerry flavor is chubby hubby- vanilla ice cream with chocolate covered peanut butter filled pretzels. Inspired by this wonderful concoction I decided to make a cupcake version of chubby hubby- vanilla chocolate chip cupcake with peanut butter frosting topped with a chocolate covered pretzel.


What You'll Need:

Vanilla Chocolate Chip Cupcake-
2 cups flour
1/2 teaspoon salt
2 teaspoon baking powder
1/2 cup butter softened
3/4 cup sugar
2 eggs
1 cup milk
1 teaspoon vanilla
1 cup chocolate chips
1 cup crusted pretzels

Peanut Butter Frosting-
1/2 cup butter
1 cup peanut butter
1/3 cup cream (try using vanilla carmel creamer)
4 cups confectioners sugar
Chocolate covered pretzels

What To Do:

Preheat oven to 375

Cream butter and sugar. Add one egg at a time.

In a separate bowl mix flour, baking powder and salt.

Alternate adding flour mixture and milk into butter mixture.

Add vanilla, chocolate chips, and crushed pretzels.

Add cupcake mixture to liners and bake 13 minutes. While cupcakes are in the oven, make peanut butter frosting. I found that using vanilla carmel creamer instead of regular creamer added that something extra. It really made the cupcake taste like chubby hubby ice cream.

Remove cupcakes from oven and let cool for 15 minutes.

Frost.

Decorate with a chocolate covered pretzel on top.


Enjoy! They taste just like Chubby Hubby ice cream minus the ice cream of course! I hope everyone loves my creation!
